Since there will always be many blogs on every niche, it's always hard for the newcomers to come up with new content. That's why i believe it's OK for them to "inspire" from the already successful blogs, as long as they bring some personal touch to the topic. Anyway, if a new blogger manages to start a new trend or niche, that would be great, but I'm sure this only happens in like 0.00001% of the time :P I agree with you that a blog has to be unique in some way, but there’s one little problem.
